We live about 5 minutes walk from the beach and it’s so easy to just go home and eat and I used to rarely bring food or snacks with us when we left the house. I first made this bread after meeting non vegan friends at the beach one day and having not brought any food with me, had a very upset child wondering why he couldn’t eat the cakes and buns the other children were enjoying. That day I decided to make sure we always have food with us when we meet with other kids, so that Indigo won’t feel left out, and this is one of the ‘finger food’ recipes that I found went down a treat. My 2 year old son Indigo absolutely loves it. And including Walnuts and Chia seeds, this loaf is not only delicious, it’s nutritious too!
Walnuts are brain food. They are packed with Omega 3 Fatty Acids and are high in powerful antioxidants. Among nuts, they are classed as the king and researchers continue to praise them for the health giving properties, including, Cancer fighting properties, anti-aging, reduced risk of cardiovascular disease, improved reproductive health in men and brain health. – See Mercola http://articles.mercola.com/sites/articles/archive/2014/05/19/7-walnuts-benefits.aspx
Chia Seeds are amongst the healthiest foods on the planet.
Like walnuts, Chia seeds contain high amounts of Omega 3 fatty acids, which are important for cognitive function. They are also high in Calcium, Manganese, Magnesium and phosphorus. Making them great for bone and teeth health.
Many Vegans and vegetarians have too many Omega 6’s in their diet and not enough Omega 3’s. Because this recipe contains no processed oils, it is a great snack to help you bring your Omegas back into balance.
